Low latency mode

I wonder what low latency mode is doing. With it off (the default) the performance is unacceptably sluggish. With it on it's like playing the old classic on a fast PC - smooth. My computer is an overclocked Core i5 with Radeon 290. I thought it would be well up to a Pinball game that superficially looks like the one from the 1990s! I'm not trying to knock it, it DOES look superb, I'm just surprised at how taxing it is on the hardware and wondered why and what it is stressing in the system so badly.

A great game and works a charm in "low latency" mode, and I've almost got the 1,000,000,000 score I want!
